Tuna & Chickpea Salad Bowls
This light, refreshing, and protein-packed salad is perfect for a quick lunch or a healthy dinner. It’s incredibly easy to prepare and bursting with fresh Mediterranean flavors.
Ingredients
- 2 cans (approx. 140g each) tuna (in water or olive oil), drained
- 1 can (approx. 400g) chickpeas, rinsed and drained
- 1 medium bell pepper (any color), diced
- 1/2 small red onion, thinly sliced or finely diced
- 1 cup cherry tomatoes, halved
- 4-6 cups mixed greens, for serving
- 1/4 cup fresh parsley, chopped
For the Dressing
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon salt, or to taste
- 1/8 teaspoon black pepper, or to taste
Preparation
- Combine Salad Ingredients: In a large mixing bowl, gently combine the drained tuna, rinsed chickpeas, diced bell pepper, sliced red onion, and halved cherry tomatoes.
- Prepare Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
- Dress and Serve: Pour the dressing over the salad ingredients and toss gently to coat everything evenly. Serve immediately over a bed of fresh mixed greens, garnished with chopped fresh parsley.
